<p>I know that this site has been neglected for quiet a long time now. Sorry for this but I&#8217;m so tied up with my work thus I never got the chance to post an update hence I made a thought of closing this foodblog.The only thing that keeps me from doing it is your positive feedbacks. Thus I decided to go on food blogging once in awhile when time permits. I hope you understand.<span id="more-916"></span></p>
<p>Honestly speaking, I have several recipes lined up for posting here. I promise to post them around May when we are settled in the new home in the Philippines. The picture you see below is <strong>Sweet Bread</strong> which I baked last week. This one is very simple too and truly a melt in your mouth bread. This will be my first entry in May.</p>

			<content:encoded><![CDATA[<p>I was so depressed after my birthday party last March. I felt insecured after seeing my old friends still slim and sexy, while I am weighing double to their weight. So, soonest they left&#8230;I started having a diet. Diva Jing sent me a copy of her diet plan she got somewhere, this Weight Loss Diet program was developed in conjunction with a grant from the US Department of Agriculture and the Food and Drug Administration. </p>
<p>My agony started with <strong>Day 1</strong>, the meal plan was consisted of all kinds of fruits except banana. I survived the first half of the day with ease. Later in the afternoon, I started imagining food while eating apple I dusted with cinnamon. Whoa, the scent of cinnamon reminds me the tasty cinnamon rolls. Crazy as I am, I turned on my pc and started searching for the recipe. Yes I know I was on diet but see, the spirit is indeed willing but the flesh is weak. So I surrendered and baked this delicious sweet cinnamon rolls instead. </p>

<p><strong>Sweet Cinnamon Rolls</strong></p>

<p class="title"><strong>Ingredients for basic dough:</strong></p>

<p>4 &#8211; 4 1/3 cups all-purpose flour</p>
<p>1 package active dry yeast</p>
<p>1 cup milk</p>
<p>1/3 cup sugar</p>
<p>1/3 cup butter or margarine</p>
<p>1/2 teaspoon salt</p>
<p>2 eggs</p>
</div>

<p class="title"><strong>Ingredients for cinnamon filling mixture:</strong></p>

<p>3 tablespoons butter or margarine, melted</p>
<p>1 to 1 1/2 cup granulated sugar, <em>I used granulated brown sugar</em></p>
<p>2 teaspoons ground cinnamon</p>
<p>3/4 cup raisins (optional)</p>

<p><strong>How to:</strong></p>
<p>In a large mixing bowl combine 1 1/2 cups of the flour and the yeast; set aside. In a saucepan heat and stir milk, sugar, butter or margarine, and salt till mixture is warm (120Â° to 130Â°) and butter or margarine is almost melted. Add to flour mixture along with eggs. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 minutes. Using a wooden spoon, stir in as much of the remaining flour as you can.</p>
<p>Prepare basic sweet dough and let rise once. Punch dough down. Turn out onto a lightly floured surface. Divide dough in half. Cover and let rest for 10 minutes. Roll each half into a 12&#215;8-inch rectangle. Brush with melted butter or margarine. In a small mixing bowl stir together granulated sugar and cinnamon; sprinkle onto dough. If desired, sprinkle with raisins.</p>

<p>Roll up each rectangle, jelly-roll style, starting from one of the long sides. Pinch seams to seal. Cut each roll into 10 to 12 slices. Place slices, cut-side down, in single layers in two greased 9&#215;12-inch round cake pans. Cover and let rise in a warm place till nearly double (about 30 minutes). (Or, cover with oiled waxed paper, then with plastic wrap, and refrigerate for 2 to 24 hours.)</p>

<p>If dough is chilled, let stand, covered, for 20 minutes at room temperature. Puncture any surface bubbles with a greased wooden toothpick. Bake in a preheated 375 degrees F oven for 20 to 25 minutes, or till golden brown. Cool slightly. Transfer to a large platter.</p>

Since inspired ulit akong magluto at mag bake lately, I thought why not try baking Pandesal as well? I searched the net for the recipe and found several kinds. This recipe I&#8217;m posting is the one I frequently bake dahil it taste really close to the Pandesal I remember. I got this recipe from <a href="http://www.recipezaar.com/105357">Rezipezaar</a> contributed by <a href="http://www.recipezaar.com/browse/getchef.zsp?id=18391">Najwa</a>.</p>

<p align="center"><strong>HOT PANDESAL</strong></p>

<p>1/2 cup water</p>
<p>1/4 cup evaporated milk (<em>Kaffeemilch</em>)</p>
<p>1/2 cup milk (<em>H-Vollmich</em>)</p>
<p>1 egg</p>
<p>1/2 cup sugar</p>
<p>3/4 teaspoon salt</p>
<p>5 tablespoons softened butter</p>
<p>1 to 2 tablespoon oil</p>
<p>4 cups flour</p>
<p>3 teaspoons dry yeast (<em>trocken Hefe</em>)</p>
<p>breadcrumbs (<em>Paniermehl</em>)</p>
</div>

<p><strong>Direction:</strong></p>
<p>Combine water, evaporated milk and milk and heat in the microwave for 35 seconds. <strong>Take note:</strong> *The liquid mixture must be lukewarm only and not hot. Besides, you also have to use dry yeast and not the fresh one or else your Pandesal will get that sour smell.*</p>
<p>Run tap water over the egg for 30 seconds to warm it. In a bowl, pour lukewarm liquid mixture and add all ingredients (except the bread crumbs) according to list order as suggested by the manufacturer. Mix well with a dough mixer. If you don&#8217;t have one&#8230;you may use a heavy wooden mixing spoon (<em>HolzlÃ¶ffel</em>). Mixing the dough manually is quiet a hard task, but never mind, this is a good exercise for your bicepts. Mix around 15 to 20 minute.</p>
<p><strong>Knead the dough!</strong></p>
<p>After you have thoroughly mixed the ingredients, you&#8217;re ready for some real fun. Now, sprinkle a little flour on your clean kitchen counter or table. Keep a little extra flour on the side to use as you work the dough. Turn the dough out onto the table. Knead the dough with your hands by folding it then pushing it with the base of your palm. Knead for 10 to 15 minutes or until the dough is elastic and just a bit sticky. Dust with more flour as you knead if necessary. The dough is supposed to be somewhat sticky. So be careful not to add to much flour.</p>
<p><strong>Give it a rest&#8230;</strong></p>
<p>Put dough back into the mixing bowl. Cover the top loosely with a damp, clean cloth or plastic wrap sprayed with nonstick cooking spray. Set the dough in a warm, draft-free place. Or in a 50Â°C (122Â°F) pre-heated oven. Keep dough covered until it doubles in size.</p>

<p>When the dough is ready, scoop out a small amount (about the size of an ice-cream scoop).</p>

<p>Spray two baking sheets with non-stick cooking spray; preheat oven to 190Â°C or 375Â°F.</p>
<p>Roll in bread crumbs in an oval shape; place on baking sheet.<br />
Cover and leave to rise in a warm place until doubled.<br />
Bake for 10 to 15 minutes, or until golden brown.</p>

			<content:encoded><![CDATA[<p>I had been trying to bake chocolate cake with that creamy chocolate frosting like the one I&#8217;ve tasted in Davao. But unfortunately, I never succeed. So last Friday, I â€œcombedâ€ the whole web to find for the frosting recipe again. There were more than a hundreds of recipes I found but selected only two. The first one I made end up in the trash bin and the second was a success. Wow, I finally got the right mixture of creamy oh so creamy chocolate frosting.</p>
<p>My husband who came in the kitchen later was shaking his head as he saw the kids faces smeared with chocolate cream. My chocolate monsters had great fun eating the leftovers with their fingers.</p>
<p>To chocolate lovers like me, Iâ€™m going to share to you both chocolate chiffon cake and frosting recipe. By the way, this delicious chocolate chiffon cake recipe uses cocoa powder instead of melted chocolate to give it its wonderful taste. Please make sure to use cake flour for this cake.</p>

<p><strong>Chocolate Chiffon Cake</strong></p>

<p class="title"><strong>Ingredients:</strong></p>
<p>2 cups sugar, divided</p>
<p>1 1/2 cups cake flour</p>
<p>2/3 cup unsweetened cocoa powder</p>
<p>2 teaspoons baking powder</p>
<p>1 teaspoon salt</p>
<p>1/2 cup vegetable oil</p>
<p>7 eggs, separated and at room temperature</p>
<p>3/4 cup cold water</p>
<p>2 teaspoons vanilla extract</p>
<p>1/2 teaspoon cream of tartar</p>
</p>

<p><strong>Instructions:</strong></p>
<p>Heat oven to 350Â°F (180Â° C).</p>
<p>Combine 1-3/4 cups sugar, flour, cocoa, baking powder, salt and baking soda in large bowl. Add oil, egg yolks, water and vanilla; beat until smooth.</p>
<p>Beat egg whites and cream of tartar in extra-large bowl until soft peaks form. Gradually add remaining 1/4 cup sugar, beating until stiff peaks form. Gradually pour chocolate batter over beaten egg whites, folding with rubber spatula just until blended. Pour into an ungreased 10-inch tube pan.</p>
<p>Bake 1 hour and 20 minutes or until top springs back when touched lightly. Invert pan on heat-proof funnel until completely cool. Remove cake from pan; invert onto serving plate. Dust cake with confectioners&#8217; sugar.</p>
<p>Makes 12-16 servings. </p>
</p>
<p><strong>Chocolate Frosting</strong></p>

<p class="title"><strong>Ingredients:</strong> </p>
<p>340 grams bittersweet chocolate, cut into small pieces</p>
<p>230 grams unsalted butter, at room temperature, cut into small pieces</p>
<p>1/2 cup confectioners&#8217; sugar</p>
<p>3/4 cup unsweetened cocoa powder</p>
<p>1/2 cup strong coffee or whole milk (or add a bit more if desired)</p>
</p>

<ol>
<li>In a medium heatproof bowl set over a pan of simmering water, melt the chocolate. When almost melted, turn off the heat and allow to melt completely, stirring occasionally.</li>
<li>While the chocolate is melting, in the large bowl of an electric mixer fitted with a paddle or beaters, beat the butter and sugar until fluffy, stopping the mixer occasionally and scraping down the sides of the bowl and under the beaters as necessary with a rubber spatula. Start on slow speed and, when combined, turn up the speed to high.</li>
<li>In a small saucepan, over low heat, dissolve the cocoa in the coffee, stirring as necessary. Remove from the heat, scrape the melted chocolate into the saucepan, and stir to combine thoroughly. On low speed, pour into the butter-sugar mixture, again stopping the mixer and scraping down the sides of the bowl and under the beaters. Beat until smooth and shiny. 			<content:encoded><![CDATA[<p>Tiramisu is one of the cake that I love to eat. There is no doubt, Tiramisu is the popular Italian dessert&#8230;known worldwide. No wonder, it is sooo delicious! I usually bake this on special occassions, and family gatherings. I simply want to serve something different than the usual or typical german cake.Take note, this cake is not for young kids due to Amaretto. The alcohol amount is not much but I&#8217;d rather warn you upfront :). The recipe also contains fresh eggs, so I advice you to consume the cake at the same day you bake it or keep the rest refrigerated.</p>

<p>Oh by the way, you need a pastry when baking this Tiramisu recipe. Since I am a lazy cook&#8230;I mostly buy a ready made one from the bakery. It makes the preparation time shorter, but just incase you are willing to bake the pastry yourself. <span id="more-907"></span>Below is the Angel Food Cake recipe.</p>

<p class="title"><strong>Ingredients:</strong></p>
<p>1 3/4 cups sugar</p>
<p>1/4 teaspoon salt</p>
<p>1 cup cake flour, sifted</p>
<p>12 egg whites (room temperature)</p>
<p>1/3 cup warm water</p>
<p>1 teaspoon orange extract, or lemon (*<em>Zitrone</em>)</p>
<p>1 1/2 teaspoons cream of tartar</p>

<p><strong>Procedure:</strong></p>
<p>Preheat oven to 350 degrees F.<br />
In a food processor spin sugar about 2 minutes until it is superfine. Sift half of the sugar with the salt the cake flour, setting the remaining sugar aside.</p>
<p>In a large bowl, use a balloon whisk to thoroughly combine egg whites, water, orange extract, and cream of tartar. After 2 minutes, switch to a hand mixer. Slowly sift the reserved sugar, beating continuously at medium speed. Once you have achieved medium peaks, sift enough of the flour mixture in to dust the top of the foam. Using a spatula fold in gently. Continue until all of the flour mixture is incorporated.</p>
<p>Carefully spoon mixture into an ungreased tube pan. Bake for 35 minutes before checking for doneness with a wooden skewer. (When inserted halfway between the inner and outer wall, the skewer should come out dry).</p>
<p>Cool upside down on cooling rack for at least an hour before removing from pan.</p>
<p><strong>ITALIAN TIRAMI-SU CAKE</strong></p>

<p>6 eggyolk</p>
<p>250 grams confectioners sugar</p>
<p>600 grams Mascarpone</p>
<p>zest and juice of 1 fresh lemon (*<em>Zitrone</em>)</p>
<p>Â½ cup cold Espresso</p>
<p>3/4 cup amaretto liqueur</p>
<p>125 grams butter</p>
<p>cocoa powder for dusting</p>
<p><strong>How to:</strong></p>

<p>Cut angel food cake in 2 equal layers. Melt butter and let cool. In a cup, combine espresso and 1/2 cup amaretto. Spoon mixture evenly over each layer of cake. Whisk together eggyolk and confectioners sugar until thick and creamy. Add mascarpone, lemon zest, lemon juice, the rest of amaretto and melted butter. Place 1 layer of cake on plate and spread 1/2 cup mascarpone mixture on top. Place remaining layer on top and cover entire cake with mixture. Grate chocolate on top of cake. Refrigerate until ready to serve. Refrigerate for 1 hour. Just before serving, dust top of cake with cocoa powder.</p>
