<p>&#8220;Red Curry Beef&#8221; is originally a Thai dish. I found this from the recipe book hubby bought me awhile ago. In this excellent dish, the spicy red curry paste with creamy coconut milk and the refreshing aroma of lime leaves are combined. I prepared this recipe for the first time on my last birthday party. I tell you, this was a hit!!! Try this tempting Beef stir fry recipe to spice up your meals!</p>

<p><strong>Red Curry Beef With Sweet Potato</strong></p>
<p><strong>Serves 4</strong></p>

<p class="title"><strong>Ingredients:</strong></p>

<p>2 tablespoons cooking oil</p>
<p>350 grams beef steak meat</p>
<p>2 cloves garlic, chop finely</p>
<p>1 big onion, slice thinly into rings</p>
<p>350 grams sweet potato, slice into cubes or bit size strips.</p>
<p>2 tablespoon red curry paste</p>
<p>300 ml coconut milk</p>
<p>3 pcs. lime leaves</p>
<p>salt to taste</p>

<p><strong>How to:</strong></p>
<p>Slice beef into strips or small cubes. Heat 2 tablespoons oil over medium-high to high heat in a preheated wok. Stir-fry beef strips  for 2 minutes until it changes color. Add onions and garlic and let saute for another 2 mintues. Then add sliced sweet potato, red curry paste, coconut milk and lime leaves. Reduce heat, cover wok or skillet and let simmer for approximately 15 to 20 minutes or until meat is tender. Remove lime leaves from wok before serving. </p>
<p>Serve red curry beef with rice.</p>

But anyways, I can still manage to accomplish things so far. With delays of course, but I think what matters is that it is being done. I have so many recipes lined-up, recipes I cooked previously&#8230;so please do not ever wonder if I&#8217;m going to post them at one time. Don&#8217;t worry, I&#8217;m not posting it altogether in one entry. First to go is <strong>Stuffed Pepper</strong>.</p>
<p>Stuffed Pepper is an easy and quick recipe to prepare, just like all other recipes I posted earlier. So now let&#8217;s us not waste our time with blah blahs,Â let&#8217;s get started.</p>

<p class="title"><strong>Ingredients:</strong></p>
<p>4 &#8211; 6 green bell peppers</p>
<p>16 oz ( 450g ) of ground lean beef</p>
<p>1Â  large onion ( peeled and finely chopped )</p>
<p>1 large egg, beaten</p>
<p>2 cloves of garlic, finely chopped</p>
<p>pinch of dried thyme</p>
<p>1 tsp finely chopped parsley</p>
<p>2 balls of Mozarella (sliced thinly)</p>
<p>2 tablespoonful of beef broth</p>
<p>4Â to 6 tablespoonful breadcrumbs</p>
<p>salt and freshly ground pepper to taste</p></div>

<p><strong>How to:</strong></p>

<p>Cut tops off peppers and remove seeds and white membrane. Wash peppers to prepare for filling. Mix ground beef, egg, salt and pepper, thyme, onion, garlic, parsley, beef broth and breadcrumbs together and mix well.Â Â Heat oven to 325 degrees or 170 Â°C. Stuff the meat mixture into the peppers,Â and place itÂ into a deep baking dish, you may addÂ Â¼ cup of water a piece of butter and pinch of salt (this preventÂ pepper to dry) and bake for 20 minutes.Â </p>
<p>When baking time is over, open oven and place one or two slices of mozzarella on top of stuffed pepper and bake it for another 10 to 15 minutesÂ or until mozzarella melt.</p>

<p>Serve hot with rice or pasta with cream or brown sauce.</p>
<p>You can change many of the ingredients in this recipe and still have a great meal. There was no mozzarella when I first learned it. Adding it gives this recipe more taste.<br />
